Has anyone seen these? They are a little more decorative than your run of the mill aluminum foil cups. You can bake in them and torch them as well. I saw them a couple weeks ago at teh MGM Grand Buffet in Detroit. I have searched everywhere for them so I can do some brulees. I can't find anything that matches what I saw. If you know what I am talking about....please let me know where I can find them or who makes them,

Did you ever find the foils for brulees? I want to make miniture brulee to sell in my shop but can't find anything really nice to use as a container, those foils sound really interesting.

Joan, I'm not sure what kind of things you have in your shop, but we have had a lot of luck baking creme brulee in hotel pans, then chilling to set...pipe or spoon into sweet tart shells or coupelles and level off with a spatula. Then you can brulee them to order or all at once. Not sure if that would fit into what you do, but it is a nice take on it. I recommend brushing the shells with white chocolate or chocolate depending on flavor to keep the shells crisp. If either of you find the foils, I'd love to know what you are talking about. Have you tried calling the restaurant at the MGM? If you are not another local business, the Chef would probably tell you where they came from...

Occasionally I use Foil cups for my Pot de Cremes as well as Brulee's and Flans. I get mine from Swiss Challet. These are thinner then the regular foil cups and kind of a brown color on the exterior. I think they price brakes down to about .06 each..Maybe cheeper. Hope this Helps. I can get you the item # if needed..

Ask for marcelo at MandM Patisserie in San Diego; he used to use them at a former employer. There was a paper distributor out there who provided them but I don't remember the name of the distributor. If he wants to know how you came to ask him about these, tell him that Jeanne From Boston suggested you call and wishes him well.
