One of our clients likes to do desserts in cosmo glasses and I am looking for a few ideas in how to layer and present desserts.

 

Some are easy - apple crisp, for example.  Others can be like a parfait, layers of mousse, cake, whipped cream, etc.

 

When there are several different choices on the same menu, I like to make them look different and need some ideas in how to serve them.

 

This week there is apple crisp, chocolate indulgence, tiramisu and caramel cheesecake.  Since I am already doing the tiramisu as a mousse, with ladyfingers for garnish; I didn't want to do a no-bake cheesecake for the caramel cheesecake dessert.  Plus, I don't have any no-bake cheesecake recipes and don't want to experiment either.

 

So I am planning on baking off a sheet of cheesecake, using an oval scoop to shape it sort of like a quenelle; I'll use some sugared pecans and graham crumbs at the bottom of the glass, one or two of the cheesecake quenelles and some caramel and more pecans on the top.....

 

How do you do your desserts in glasses?  Do you layer them like parfaits or do it another way?  Let's share some ideas....
