Got to Be NC Festival Food Expo

The 2010 Food Expo at the Got to Be NC Festival takes place on May 21-23 at the NC State Fairgrounds in Raleigh. This years festival will draw 75,000- 100,000 consumers. If you would like to participate in the Food Expo, please contact Myrtle T. Earley at 919-733-7912 ext 231 or email her at myrtle.earley@ncagr.gov.

The deadline has been extended to March 31, 2010. This year, the Expo will have a NC Wine Garden, NC Specialty Foods section and a NC Farm Fresh section. I am making cupcakes frosted with white chocolate cream cheese frosting (ingredients are white chocolate, cream cheese and butter, no sugar) to sell for valentine's day. Can anybody tell me what temperature they need to be displayed at and how long is the shelf life? Thanks

I have not used the matrix for cheesecakes, just butter cakes and cupcakes. I am in the process of working with a chef at my school and we are adding audio to tool to walk bakers through using it. I will give it a try with cheesecake ingredients and if it works I will definitely let you know; in the mean time you can try and just put 0.00 in the areas not applicable.
