Hi Denay,...anytime I'm doing cheesecake and added fruit, caramel or chocolate. I add some of the base to whatever your using. It helps it not to sink into the cheese cakes...Good luck.

Denay, when I add caramel or fruit swirls to my cheesecake they tend to sink. Is there a secret to this I'm not getting? Thanks for any tips you could give me.

I have to tell you I had just bought that pan locally, and didn't even think about it because I thought for some reason that the letters were a relief in a cube (picture on box)and would be way too small for a whole cake. A local store, Old Time Pottery had those pans for $5.99 and I just bought one on a whim last week! I will be running over (they aren't close to home) ASAP to see if I can get another one or two! Thanks!

Hi Denay I live in selma Al and this is the first I ever heard of the cottage law. I am so grateful that my state offer this law. I have a passion for baking and decorating wedding cakes. I moved to Selma about two years ago. My husband retired and wanted to move in the country. We closed our bakery in Michigan and since I've been here I found out that its only to bakeries in Selma and they both are home base bakeries. Once again thanks for posting the info about the cottage law. First thing Monday morning I am going to contact someone at our city who can direct me to right office, so I can start my baking business. Thanks again.

Thank you for posting the information about the state sponsored "cottage law" concerning at home businesses. I've been considering the idea for sometime given the present economy. Any information about Washington state?

Thanks Jeanne, I actually found a pan, but I don't know how long it will hold up. Times like this I wish I knew a custom cake pan maker.

Lipstick and Wine Glass...

I spent a lovely weekend in Atlanta, browsing through Atlantic Station, visiting malls and dining at a couple hot spots; and if there is one thing I hate it’s dirty serving ware. I normally let somethings go, tell the waitstaff and keep it moving; but when an issue reveals itself over and over I have to say “wait just one minute.”

This year I have noticed an increase in lipstick smudged glassware and dirty dishes, first at a supposedly pricey restaurant in Atlanta, then at local breakfast chain… Continue

Enter a Contest...outside the box

Disclaimer: I am not talking about the major pastry contest and for those who do not enter anything but professional pastry art/design competitions, this may be small potatoes and not worth the read; but for those novice bakers this is something to consider.

I noticed a number of members of the Dessert Professionals have never entered any contest and I just want to turn you on to a website that you might want to bookmark should you get the inkling to compete. Competing with your peers can be a… Continue

Food Entrepreneurs

Friday evening I was exhausted after a long week of research and writing and just wanted to lay across my couch and turn into a potato, you know the kind???. My daughter called and said you have to watch this program on CNBC so I flicked over to the channel and what did I see? A number of food innovators telling their stories about “ How I made My Millions with Kernel Seasons. ”

What is the secr… Continue

Biscotti saves the day!

The saying, "the only thing that is constant is change" is only too relevant in the food processing industry. There was a time when consumer and business trends used to change slowly, everyone, the food professional and the customer had an opportunity to spend time analyzing and adjusting to the changes that were taking place, allowing us time to make well-informed decisions. Unfortunately today, as in life, change in consumer and business trends happen rapidly. Changes in the market place may l… Continue
