We’re happy to announce that a winner has been selected in the “Don’t Lose Your Temper Giveaway”. Meet our winner, Sylvain Haage (pictured below, right).
DessertProfessional.com had the chance to speak with Haage about his time as a dessert professional and his plans for his new tempering machine.
A Bit About the Winner
Haage began his career in dessert as an apprentice in France, where he spent 3 years working under Gerard Moyne Bressand, M.O.F. Pâtissier-Chocolatier. After his apprenticeship, Haage traveled the world, working as a pastry chef in fine establishments from France to Bora Bora, including a stint on the Queen Mary 2, a luxury cruise oceanliner. Currently, Haage serves as the Head Pastry Chef at the luxurious Westgate Hotel in San Diego.
Haage is also an active member of the Dessert Professional Connect Network and welcomes any questions about pastry or chocolate techniques from fellow dessert professionals. Find his profile here.
His Plans for the Tempering Machine
Part of the team responsible for making guests' experiences stellar at the Westgate Hotel, Haage plans to make good use of the Chocovision Revolation Delta. The 10-lb capacity is perfect for the production of his extravagant chocolate centerpieces (pictured top left, left), averaging about 7 lbs. each, and will definitely come in handy for his V.I.P. bonbons. We'll be checking back in with Sylvain to see how everything is going in his world of pastry and chocolate.
