Coffee Cherry and Almond Mendiants by Mehdi Chellaoui

Coffee and chocolate are a great combination, as both are products of fermentation and roasting. The sweet tart cherries and crunchy almonds help to punctuate the earthy and toasted flavors of this confection.

0.17 oz/5 g instant coffee
210 g dark chocolate, Guittard 70%
2.1 oz/60 g dried cherries
2.1 oz/60 g chopped almonds

1. In a coffee grinder, grind the instant coffee to a fine powder.

2. Melt the chocolate and add the powdered coffee. Temper the chocolate and fold in the remaining ingredients. Hold the mixture between 88 and 90°F.

3. Using a small spoon, scoop out 0.35 oz/10 g portions onto a tray lined with parchment paper. While portions are still liquid, tap or vibrate tray to help settle the ingredients. Cool in a refrigerator until fully crystallized, approximately 10 minutes.
