Prius Pops

Prius PopsJMPurePastry produced these ‘Prius Pops’ for Toyota® Prius® Family Playground to give away at rock music festivals across the country. A variety of natural flavors included Blackberry Basil, Pineapple Coconut, Mango Passion and Red Fruits.

Yield: 10 large frozen pops

 

Pineapple Coconut:

1.3 oz/36 g granulated sugar

0.07 oz/2 g xanthan gum

17.6 oz/500 g pineapple juice

7 oz/200 g coconut milk

0.07 oz/2g gelatin sheets

 

Blackberry Basil:

1.3 oz/36 g granulated sugar

0.07 oz/2 g xanthan gum

12.3 oz/350 g blackberry puree

1.76 oz/50 g key lime juice

3.5 oz/100 g water

7 oz/200 g apple juice

0.17 oz/5 g basil

0.07 oz/2 g gelatin leaves

 

Mango Passion:

1.3 oz/36 g granulated sugar

0.07 oz/2 g xanthan gum

17.6 oz/500 g mango puree

3.5 oz/100 g passion fruit juice

3.5 oz/100 g water

0.07 oz/2 g gelatin leaves

 

Preparation:

1. Freeze pop molds. Combine sugar and xanthan well.

2. Warm small amount of fruit juice mixture.

3. Whisk in dry ingredients. Simmer to dissolve.

4. Bloom and melt gelatin. Add to warm liquid.

5. Blend into remaining juice mixture. Fill molds and insert sticks. Freeze.
