Eric Kayser is the most famous and successful bread baker in France. He operates more than eighty Maison Kayser locations worldwide, and earlier this year opened his first North American bakery/cafe in New York City. There are now three Maison Kayser outposts in NYC, where he sells his pastries side-by-side with his large selection of breads. Eric is most famous for his outstanding specialty breads that use a liquid natural starter without commercial yeast and that are crafted using his custom-made lacto-fermentation equipment.
