Coupe du Monde de la Patisserie Team USA President Gilles Renusson recruited veteran competitors Donald Wressell and Ewald Notter to coach the 2015 team. They are both former Coupe du Monde medalists who have mentored and educated an entire generation of pastry chefs in America. Notter is a renowned sugar artist, and Wressell is famed for his extraordinary knowledge about chocolate and its endless possibilities in dessert and confection applications. Together with Team USA 2015 competitors John Kraus, Josh Johnson, and Scott Green, they developed the three recipes below that helped put the United States back on the podium in Lyon for the first time since 2005.
