Alain Dusasse’s mission is to educate the next generation of top international culinary professionals with exceptional global standards and creativity. In September 2016, Alain Ducasse Education will launch a new intensive training program in pastry arts – the “Pastry Arts Diploma for Restaurant”. This program is designed for beginners wishing to start their careers as a restaurant pastry chef. The six month course will be taught at Ecole Nationale Supérieure de Pâtisserie in Yssingeaux, France with small class sizes and with ninety percent of the curriculum consisting of hands-on practice. A three month practical course is followed by a three month internship in a French restaurant. Classes are taught in English and modules include: Fundamentals of Pastry, Bread for Restaurant, Viennoiseries, Reinterpretation of Classic French Desserts, Small Cakes & Petits Fours, Ice Cream, Bistro Desserts, Signature Alain Ducasse Desserts, Chocolate & Confectionery, Kitchen Operation Management, and Professional Communication.
